In April 2020 we were delighted to welcome to Flavor On Main, Executive Chef and Italian native, Fabrizio Perinelli to manage our kitchen, oversee our menu, and work with our talented team to create mouth-watering dishes for our customers—using traditional Italian dishes of his past with French, Asian, and Mediterranean influences to create new Modern American cuisine.
Born in Priverno, a small town south of Rome, Perinelli developed a love for cooking at a very young age from his mother, who taught him how to make homemade pasta and other rustic Italian dishes. He moved to America when he was 21 and has been involved in the restaurant business ever since. A graduate of the Culinary Academy of Long Island, Fabrizio apprenticed under the well-known NYC chef Philip Guardione at Piccola Cucina.
After working in Europe and New York City at Michelin-starred restaurants, his journey brought him to Long Island where he worked with New York-based chef, food stylist, and restaurateur, Lia Fallon. From there, Fabrizio moved on to the heart of the south shore to help open Aria Melanie—a new restaurant in Bay Shore which ranked among the best Italian restaurants in Newsday’s Annual Top 100 List and achieved a rating of top 3 new restaurants on Long Island while he was Executive Chef. Perinelli soon became the chef and co-owner of the popular restaurant Bella Vie. Arguably a master of pasta, his gnocchi dish was awarded “Best Pasta of the Year” in 2018.
While Fabrizio will be leading the day-to-day restaurant functions here at Flavor On Main, Garth Hansen continues to play a vital role working in conjunction with Chef Perinelli and our banquet facilities. It’s exciting to have new input of ideas and Fabrizio shares our passion for producing top dishes using fresh, local ingredients.
